If you’re not feeling sick at the very thought of food after an indulgent festive period, you may be interested in some culinary inspiration. How about a delicious roasted carrots idea from an unlikely source in the form of actress and comedian Amy Poehler?
Poehler, 54, is, of course, best known for her roles in sketch comedy shows, sitcoms, and comedy movies. Her movie credits include the likes of 2001’s satirical comedy “Wet Hot American Summer,” 2004’s teen comedy “Mean Girls,” and 2015’s animated coming-of-age film “Inside Out.” Additionally, her television credits include the likes of the sketch comedy series “Saturday Night Live” and “Upright Citizens Brigade,” and sitcom “Parks and Recreation” (per IMDb).
She does, however, apparently know a thing or two about cooking. Poehler proved this when discussing her favorite roasted carrots recipe on a recent episode of her hugely popular podcast “Good Hang with Amy Poehler.”
Amy Poehler’s Roasted Carrots Impressed Ina Garten

The television cook, author, and Food Network host, 77, chatted all things food (and more) with Poehler. The episode in which she featured lasted for 68 minutes and was wonderfully revealing.
The episode’s description reads, “Ina Garten knows never to show up to a podcast taping empty-handed. Amy hangs with the author and host of ‘Be My Guest’ and talks about whether or not Ina’s husband, Jeffrey, is in the CIA, her favorite New Yorker cartoons, and how to make a store-bought Thanksgiving fabulous.”
In the episode, Poehler revealed to Garten that, when cooking roasted carrots, she uses two bold ingredients to give them some serious flavor. It was a combination her guest enthusiastically approved of โ and who could argue with an expert like her?
Poehler Adds Feta and Honey to Her Roasted Carrots

Feta โ a Greek brined white cheese made from sheep and/or goat’s milk โ gives a creamy depth to the carrots courtesy of its salty, briny, and tangy notes. Honey โ the sweet and viscous substance made by several species of bees โ enhances and amplifies the inherent sweetness of the carrots. It’s a combination that works beautifully, adding bags of texture and flavor to the vitamin-rich vegetables.
When making this simple but delicious side dish, it’s important to know precisely when to add the feta and honey. After tossing the carrots in olive oil and seasoning them with salt, pepper, and various dry seasonings of your choice, drizzle some honey on them. This will start the caramelization process (add some after roasting, too, to really get that sweet flavor). Regarding the feta, ideally, it should be added after roasting, just prior to serving. That will allow it enough time to soften slightly without turning mushy.

Amy Poehler is set for a busy 2026. Along with producer, director, writer, and actor Michael Schur, she has created a comedy series called “Dig.” It’s based on the 2023 novel “Excavations” by Kate Myers. Poehler is set to write, executive produce, and star in the series. The likes of Geraldine Viswanathan, Fina Strazza, Antonia Thomas, and Hugh Laurie are among the show’s cast members. It will air on Peacock, but it doesn’t yet have a release date.
