Ramsay has spoken of the surprise ingredient on several occasions (per Fox News). On one notable occasion, he demonstrated his process for cooking scrambled eggs on “Good Morning America.”
Unsurprisingly, his process is very specific and intricate, and it’s right at the end of said process that his secret ingredient gets added.
Gordon Ramsay Adds Crème Fraîche to His Scrambled Eggs
Gordon Ramsay’s secret ingredient when preparing scrambled eggs is a thick and cultured cream, which he adds at the very end of the cooking process to prevent them from overcooking.
The Scottish chef adds cold crème fraîche, a high-fat dairy product, which stops the cooking process and notably adds a richness and a smooth texture without any risk of curdling.
His entire process is as follows:
- Crack the eggs into a saucepan.
- Never season the eggs before cooking, as they’ll turn grey and watery.
- Turn the gas knob up three-quarters of the way.
- Mix the eggs over the hob.
- Add a couple of slices of butter to the eggs.
- While mixing, using a plastic scraper, clean the pan of any sticky egg as you go along.
- Remove the eggs from the heat and continue stirring, as they will continue to cook.
- Keep stirring until the eggs are nice and fluffy.
- Add the secret ingredient, which is a dollop of crème fraîche.
- Add salt and pepper to taste.
- Mix all the ingredients together.
- Serve.
